This vegetable contains good amounts of potassium, a fair amo<\/span><span style=\"color: #333333;\">u<\/span>nt of calcium and some iron and sulfur, all of which are needed by the body for maintaining good health.<\/p>\n<p class=\"p1\"><span style=\"color: #333333;\">Artichoke is beneficial in the treatment of diabetes because of its high insulin content. A fully ripe artichoke is sa<\/span>id to contain more than two percent of insulin.<\/p>\n<p class=\"p1\"><span style=\"color: #333333;\">Ripe artichokes are generally available only during autumn or fall.
